Hannah’s Easy Peasy Lemon Drizzle cake.
This is by far the best Lemon Drizzle cake I’ve eaten.
For the cake:
- 3 Eggs
- Self raising flour
- 1/2 heaped tsp baking powder
- Castor Sugar
- Margarine (or butter)
- 1 Lemon
Weigh the eggs in their shells. Then add the same weight of flour, sugar & marg.
Beat together sugar & Marg. Add the eggs one at a time. Fold in flour, baking powder, grated zest of lemon and half the juice. Place in lined loaf tin. Put in hot oven 170c for approx 30-40 mins. Remove from oven, poke holes in top with skewer and drizzle remaining lemon juice over top of hot sponge.
For the drizzle:
- 1 Lemon
- 100g Granulated sugar
Mix together lemon juice and sugar and pour over cake while still warm but not hot!
