Mum’s Easy Peasy Victoria sponge

For the cake:

  • 225g of Butter, castor sugar and SR Flour
  • 4 Eggs
  • 2 tsp Baking powder
  • 4 tsp warm water

Put all together in a bowl and beat for 1 min.
For a Coffee & Walnut version, add 2 tbsp coffee essence and handful of chopped walnuts.
And for a Chocolate version, add 2 tbsp cocoa.
Then divide into two 19cms lined baking tins and bake for approx 25mins at 170c fan.

For the filling:

  • Butter (150g)
  • Icing sugar ( 450g)
  • Dash of milk

Beat together. For walnut add 8 tsp coffee essence. For chocolate add 2 tbsp cocoa.
Or… just have lashings of strawberry 🍓 jam and fresh cream
